Hello Kurt,
First of all,i'd like to say:slow time control is better than Blitz of course
For example my favorite slow time control is 24 hours per game
Some Notes about opening book testings:

-Fast time controls (Blitz) are preferred by thousands of users (probably more than 95 % of the games are played in Blitz)
In my opinion,this is due to the opening theory is changing dramatically very fast,almost daily are appearing newer and stronger variations
And in case of using a slow time control, then i think the Book Authors will have no patience to see their book performance...
*Note that many top book makers are analysing their favorite lines with slow time controls for finding newer stronger variations
About 3 minutes time control:
-This is the most popular time control used on-SCCT/Plychess/Testo/Pionerchess...
